Paayasam (or payasam) is a traditional Indian pudding made from milk, rice, and sugar. While variations exist across South India, it is most strongly associated with Tamil Nadu where it has deep cultural significance and is an essential part of festivals and temple offerings. The other states have their own sweet specialties.
