Dal Bati Choorma is the signature dish of Rajasthan, consisting of dal (lentil curry), bati (hard wheat rolls), and choorma (sweetened crushed wheat). It originated in the desert region where bati could be cooked in the heat of the sun. Orissa, MP, and Kashmir have distinctly different culinary traditions.
