Rogan Josh is a signature dish from Kashmiri cuisine, an aromatic lamb curry with a characteristic deep red color from Kashmiri chilies. It's one of the most recognized dishes of Kashmir. MP, Tamil Nadu, and Orissa have entirely different culinary traditions and don't feature this dish.
