Kimchi is a traditional Korean dish made from salted and fermented vegetables, most commonly napa cabbage and Korean radishes with gochugaru (chili powder), garlic, ginger, and other seasonings. While Japan has tsukemono and China has paocai, kimchi is specifically Korean and a central part of Korean cuisine.
