The first chocolate was developed by ancient Mesoamerican civilizations, primarily the Olmecs (1500-400 BC) in what is now southern Mexico. The Mayans and Aztecs later cultivated cacao and consumed it as a bitter, spiced beverage. While Belgium and Switzerland are famous for modern chocolate production, chocolate originated in Mexico.
